30 Minute Minestrone

Ingredients
2 medium carrots, chopped1-1/2 cups chopped cabbage1 celery rib, Thinly sliced1 small onion, chopped1 clove garlic or 1 tsp. minced2 tsp. vegetable oil3 cups water1 can italian stewed or diced tomatoes.undrained3 cubes beef bouillion1-1/2 cup torn fresh spinach2/3 cup cooked salad macaroni1/4 tsp. pepper
Directions
In a 3-qt saucepan, saute carrots, cabbage, celery, onion and garlic in oil for 5 minutes. Add water, tomatoes and bouillon. reduce heat and simmer uncovered for 20-25 minutes or until vegetables are tender
