8 oz dried lentils4 chicken thighs2 medium onions, chopped16 oz frozen cauliflower8 oz frozen spinach1 small sweet potato, choppedpinch red pepper flakes1 tsp celery seed6-8 C water
1) Simmer chicken thighs, celery seed and onions in 6 cups of water for one hour.
2) Pull out thighs from pot, remove skin and bones, chop meat and set aside.
3) Add lentils, cauliflower, spinach, sweet potato and red pepper flakes to the cook pot and simmer until lentils are cooked the way you want them.
4) Add chopped chicken meat, stir, and enjoy.
