Gluten-free Peanut Butter Chocolate Chip Cookies

Ingredients

1/2 cup granulated sugar1/2 cup packed light brown sugar1 egg (beaten)1 cup smooth peanut butter1 tsp vanilla extract1/2 cup chocolate chips (I used semi-sweet chocolate chips)
Mix all ingredients in a bowl. Take 1 tbsp on mix and roll into a ball and place on cookie sheet, 1 inch apart. Take a fork and do a cross-hatch design on the top of the cookie, pressing in slightly.
Cook for 10 minutes on ungreased cookie sheet, turning the pan half way through to ensure even baking. Look for a light golden brown top on cookie. Allow to cool.
