Savory Squash Stew

Ingredients
1 onion, diced3 cloves garlic, minced2 T vegetable oil3 C peeled, seeded, chopped winter squash2 potatoes, chopped2 T whole-wheat flour2 C water or veggie or chicken stock2 T mustard1/4 t cinnamon2 T cider vinegar1 C frozen peas1 C frozen cornsalt, pepper to taste
Directions
In a pot, saute onion and garlic 4 minutes. Add squash and potatoes, saute for 5 minutes. Stir in flour until dissolved. Add stock, mustard, cinnamon, and vinegar, and simmer over low heat about 30 minutes. Stir occasionally. Add peas and corn and cook another 5 minutes. Season with salt and pepper. Recipe is thick enough to be used as a veggie pot pie base.
