1 tsp olive oil2 tsp curry powder1 tsp dried thyme2 cloves minced garlic1/4 chopped red or yellow onion1/4 colored pepper chopped1/2 c frozen peas1/3 c FF chicken broth1 firm medium tomato deseeded and choppedsalt and pepper to taste4 oz raw Shrimp1 tbsp whip cream cheese
Saute garlic, onion, pepper, peas, curry powder, thyme, in 1 tsp olive oil over medium high heat. Add 1/2 of the broth and stir fry 3 minutes. Add tomato and shrimp and the rest of the broth and stir fry until shrimp no longer pink. Season to taste with salt and pepper. Stir in cream cheese until melted and turn off heat.
