German Puff Pancake / Deutsch Eierkuchen

Ingredients
3 eggs1/2 cup flour1/2 cup milk (soy/rice/cow...whatever you have works)1 Tbsp oil1 Tbsp sugar1 Tbsp margarine for pan
Directions
These are fun for kids of all ages! There's a more complicated way to make these, but this way works great and is a lot simpler. =)

Heat oven to 375 degrees. Put about 1 Tbsp butter/margarine in pie plate and put in oven to preheat whie you make the batter.

Mix all ingredients together except eggs. You don't want to overmix the eggs or it'll come out all rubbery. Add eggs and mix just until combined. Add egg mixture to preheated pie plate and bake for 20 minutes. Check on it toward the end since all ovens bake differently. It should look something like this.

Make sure the kids are in the room when you take it out of the oven. The pancake deflates very quickly!

Serve with sliced fresh fruit or berries and/or powdered sugar, syrup or lemon juice. Enjoy! =)
