Ingredients

8-10 medium potatos
2 tbsp chopped onions
2 tbsp herbal vinegar (or white balsamico)
1 tbsp olive oil
pinch of salt, pepper and sugar
1tsp parsley
3-4 tbsp water (the potatos soak up liquid so you need to add water until it gets the right, almost creamy consistency)
Tips
if you like, you can add cucumbers or bacon
Directions
peel and cook the potatos in slightly salted water for about 20 min until done (you might have to slice them in half or quaters if they're big)
let them cool until you can handle them
meanwhile you mix about 3 tbsp of water with vinegar, herbs, salt, sugar and pepper. Add the onions and oil, stirr well and add the finely chopped or sliced, almost mashed potatoes.
mix and add water if necessary
I like it best if it's served still a little warm, but you can refrigerate it, too
