Fish Stew w/beets & broccoli

Ingredients
* Chinook Salmon, 8 oz * Sea Bass (fish), 4 fillet * Olive Oil, 2 tbsp * Onions, raw, 3 cup, chopped * Garlic, 4 clove * Bacon, 7 medium slices, chopped * Broccoli, fresh, 3 cup, chopped * Beets, fresh, 1 cup chopped * Carrots 1 cup, chopped * *Potato, raw, 3 cup diced * safeway chic broth low fat low sodium, 4 cup I used broccoli stem pieces I used baby carrots I used baby red potatoes quartered Braggs dry sprinkles 2 tbls Emeril's Asian Essence 2 Tbls Chipolte powder 2tbls Onion powder 2bls Garlic powder 2tbls
Directions
Saute the bacon, garlic and onion in olive oil until onion just starts to get transparent.
Add carrots cook 10 min
Add fish
Add Chicken broth cover and simmer 15 min.
Add broccoli, beets & potatoes
Add spices and simmer covered on low for 30 minutes

The beets give this a beautiful color and it is a bit spicy from the chiplote..

You could use any fish you have on hand.. I just use whatever I have in the freezer.
