Chicken and Veg casserole

Ingredients
2 tbsp oil1 onion - chopped2 cloves garlic - chopped1 chicken breast - in chunks3 stalks celery - chopped3 x 1/2 peppers ( red, yellow and green) - chopped8 medium mushrooms - chopped1 tin chopped tomatoes8 cherry tomatoes - halvedstock cube
Directions
heat oil - add onions and garlic to soften
add chicken breast chunks to brown
add other veg for about 5 mins
add tin tomatoes and simmer for 20 - 30 mins
