Pork Marsala with Shiitake Mushrooms

1 Pound Pork Tenderloin1/8 Tsp Salt1/4 Tsp Black Pepper1/4 Cup Flour1 Tbsp Olive Oil1/2 Cup Marsala Wine1/2 Cup Chicken Broth1/2 Lemon, juiced5 Ounces Shiitake Mushrooms, sliced
1. Slice pork tenderloin into 1/2" thick medalions. Pound thin with meat hammer.
2. Mix flour, salt and pepper. Coat pork pieces with flour mixture.
3. Heay oil in skillet. Brown pork pieces on both sides, then remove from skillet.
4. Deglaze the skillet with marsala wine, then add chicken broth, lemon juice, and mushrooms. Cook until sauce reduces and mushrooms are tender.
5. Return meat to skillet, and cook for 5-10 more minutes. Serve 4 ounces of meat with approximately 1/4 cup mushrooms and sauce.
