Chinese Five Spice Beans

Ingredients
1-1/3 cups diced zucchini1-1/3 cups diced carrots1 cup chopped onion1-1/3 cups chopped sweet bell pepper6 cloves of garlic, minced2 tablespoons canola oil3-1/2 cups pre-soaked Butter Beans (Big Lima Beans) [approximately 1-1/2 cups unsoaked]2 tablespoons Chinese Five Spice1 teaspoon freshly ground black pepperapproximately 8 cups of water
Directions
Heat oil over medium-high heat in dutch oven. Add zucchini, carrots, onion, sweet bell pepper, and garlic, and saute for 10 minutes. Add Chinese Five Spice and black pepper and saute for about 30 seconds-1 minute. Add Butter Beans and water. Bring to a boil, turn down heat to a low boil, and cook for 1-1 1/2 hours, or until beans are tender.

Serving Size: Makes 8 1-cup servings, approximately
