Spaghetti with Tuna and Fresh Tomato Sauce

Ingredients
1. 1 1/2 pounds tomatoes, cut into approximately 1/2-inch dice 2. 6 tablespoons olive oil 3. 2 cloves garlic, minced 4. 3/4 cup chopped fresh basil 5. 2 teaspoons balsamic or red wine vinegar 6. 1 teaspoon salt 7. 1/2 teaspoon fresh-ground black pepper 8. 3/4 pound spaghetti 9. 2 (6 ounce) cans tuna packed in oil, drained
Directions


1. In a large bowl, combine the tomatoes, oil, garlic, basil, vinegar, salt, and pepper.
2. In a large pot of boiling, salted water, cook the spaghetti until just done, about 12 minutes. Drain and toss the pasta with the tuna and the tomato mixture.

    Very nice meal that won't heat up the house.
    I didn't have enough basil so I added parsley and capers.

    An Italian friend told me it's a tradition to eat tuna spaghetti sauce on New Years. It sounded awful to me, but she gave me some and it was delicious but I never made it myself. I will try this or some modified version of it. - 8/2/10
