Pork Chops with Homemade Applesauce

Ingredients
RUB1 teaspoon dry mustard1 teaspoon celery saltcoarse salt and freshly ground pepper, to taste4 bone-in pork chopsAPPLESAUCE4 Granny Smith apples , peeled, cored and cut into thinwedges4 tablespoons butter1/4cup apple juice1 tablespoon lemon juice2 teaspoons sugar1/4teaspoon cinnamon1/4teaspoon nutmeg
Directions
[1] In a small bowl, combine dry mustard, celery salt, salt
and pepper. Season pork chops evenly with rub, pressing it
into meat. Allow to stand at room temperature while you
make applesauce.
[2] To make applesauce: Heat the butter in a medium sauté
pan over medium-high heat, add apples, stirring occasionally,
until they begin to brown, about 5 minutes.
[3] Add apple juice, lemon juice, sugar, cinnamon and
nutmeg. Lower heat to a simmer and cook, covered, until
apples are tender, about 5 minutes. Transfer to food
processor (or blender) and process until smooth. If
applesauce seems too thin, transfer back to pan and simmer
until thick.
[4] Heat grill (or broiler) to high. Sear (or broil) pork chops,
turning once, 3 minutes per side. Reduce heat to medium and
continue to cook for another 6-8 minutes. Serve with
applesauce.
