Southwest Grilled Chicken/Shrimp/Veggie kabobs

2 boneless, skinless chicken breasts15 small shrimp (tails removed)1 medium Red Onion2 Jalapeno peppers1 cup of Cherry Tomatoes4 Tbsp Light Mayo4 Tbsp fat free Sour CreamSpices such as paprika, cumin, chile powder, onion powder, garlic powder, salt & pepper
Makes 2 light/healthy dinners
Cut onion and jalapeno into large chunks.
Rinse shrimp and cut chicken into large chucnks as well.
Using kabob skewers, start assembling skewers of chicken, shrimp, and vegatables.
Meanwhile, mix sour cream & mayo with spices until you have a nice Southwestern kick.
Place skewers on grill and grill until heated through while basting with Southwest sauce.
