Homemade chicken veggie soup

Ingredients
2 bonelss skinless chicken breasts1 head of broccoli1 small head of cauliflower2-3 carrotts3 stalks celery 2 small potatoes peeled and cubed4 cups low sodium chicken broth4 cups watersalt and pepper to taste
Directions
Saute vegetables until soft
add stock and water
add chicken breasts
and simmer on low about 30 minutes until chicken is fully cooked
Remove chicken breasts and cut into small cubes once it has cooled a bit
Add chicken back to the soup pot
