2 cups organic whole wheat pastry flour1/2 cup Stevia in the Raw1/4 cup brown sugar (packed)2 tsp baking powder1 tsp salt3/4 cup almond milk (unsweet)1 tsp vinegar2 eggs1 tsp vanilla2 TBS coconut oil (melted)Glaze:1 cup confectioners sugar2 TBS almond milk1/2 tsp vanillaor Cinnamon Sugar1 TBS coconut oil
Wisk together the flour, brown sugar, stevia, and salt. Mix together the almond milk, vinegar, eggs, vanilla and coconut oil. Mix the wet and dry ingredients until smooth (do not overmix).
Fill the lightly greased donut pan 3/4 full with batter, and bake in a preheated 400 degree oven until a tooth pick shows no crumbs (about 10 minutes). Makes 12 medium size donuts.
For glazed donuts, mix together the confectioners sugar, almond milk and vanilla. Dip one side of each slightly cooled donut in the glaze.
For cinnamon sugar donuts, lightly brush a donut with melted coconut oil. Roll the donut in the cinnamon sugar until well coated.
