Ingredients
6 cups marinara sauce (I used Colonna but you can use whichever you like)2 cans Hunts diced tomatoes4 onions1 tbsp chopped garlic2 tbsp cooking oil2 tbsp. italian seasoning2 lbs. chicken breastDutch oven stock pot.
Directions
Makes 8 servings.
Cook onions in oil until they begin to get soft. Remove and set aside.
Put a drop more oil in pot.
Put chicken in oil and lightly brown trying to scrape onion "leftovers" from bottom of the pot. Do not overcook. Cook about 3-4 minutes per side. Add onions to chicken.
Pour in marinara sauce, diced tomatoes, italian seasoning to taste.
Cover, reduce heat to low and cover.
Cook for an hour and check/stir frequently to make sure chicken isn't sticking to the bottom and taste to make sure seasoning is to your liking.
Make whole grain pasta to go along with it.
