125g Butter3/4 cup Splenda (18g)1 tsp Vanilla Essence2 eggs, beaten2 cups self-raising flour (240g)2/3 cup milk (2% fat)
1. Cream butter & sugar.
2. Add vanilla.
3. Add eggs gradually.
4. Fold in flour alternately with milk.
5. Spoon into muffin pans & bake in a moderate oven for 15-20 mins until skewer inserted comes out clean.
Makes 12 muffins.
