Egg White Frittata with Ham & Veggies

Ingredients
16 egg whites75 grams ham, chopped/shredded4 oz light cheddar cheese, grated1 c. broccoli florets1/3 c. chopped green pepper1/3 c. chopped red pepper3-4 shallots, chopped2-3 T. Light Garlic & Herb Cream CheesePepper & garlic powder to taste
Directions
Preheat oven to 350ºF. Heat oil in over medium high heat. Add peppers, and shallots and saute until tender crisp. Add ham and cook until heated through. Season with pepper & garlic powder.

Meanwhile, steam broccoli in covered microwave dish for 1-2 mins or until tender-crisp. Once cooked, add broccoli to veggie and ham and mix to combine.

In a medium bowl, whisk egg whites and cream cheese together until fairly well blended and small bits of cream cheese remain in the egg mixture.

Pour egg mixture into pan with veggies and ham and cook until eggs are partially set, stirring regularly. Spoon mixture into a greased 9-inch springform pan and shake to settle the mixture. Sprinkle with grated cheddar. Bake in oven until eggs are set and cheese melts on top. Remove from oven and let sit for a few minutes before removing spring pan. Serves 6.

    This was wonderful! Although, I didn't have broccoli, or peppers...so I put asparagus and canned mushrooms instead. It was very delicious. And a pie pan works just as well as a springform pan :) - 2/6/08
