Mac and Cheese + broc/cauliflower/skim milk

Ingredients
1/2 T butter1/2 T low fat margarine1/8 cup chopped onion2 garlic clovesS + P, thyme1 cup skim milk1/2 cup chicken stock (1/4 cube + water)4 oz cheddar6 oz blue menu penne1 cup chopped broccoli and cauliflower (total)1 slice whole wheat bread (toast, crumbs)
Directions
cook pasta al dente, add veggies halfway.

melt butter. add onion/garlic, spices. add flour, mix well, cook for ~2 mins. add milk and stock, bring to boil, stirring. remove from heat. add 3oz cheese.

crumble breadcrumbs and 1 oz cheese
