Laura's Breakfast Soft Taco

Ingredients
4 eggs1/4 Cup Sargento Reduced Fat Mexican Shredded Cheese3 ounces baby spinach2 medium sized mushrooms, sliced2 tbsp. scallions chopped1/2 cup tomatoes, chopped3 Mission Carb Balance Tortillas, fajita sized1/2 avocado sliced and dicedSalsa, add on top of taco
Directions
Chop up all veggies except for avocado and saute with a little cooking spray. Scramble 4 eggs and add 1/4 cup cheese and cook with sauteed veggies. When cooked, add sauteed veggies to heated tortilla and add chopped avocado on top along with salsa.

Serving Size: 1 tortilla and a third of the scramble
