FOR THE CRUST:cauliflower - half a large cauliflower head2 egg-whites2 cloves garlic1 wedge extra-light laughing cow cheese2 pinches mixed herbs1-2 pinches chilli flakessaltFOR THE TOPPING:1 wedge extra-light laughing cow cheese3 salad tomatoes, "insides" removed and remaining tomato chopped dried with kitchen paper0.5 small onion, chopped and dried with kitchen paper(+ any other vegetables you have in the fridge, and you could add meat if you wanted to although egg whites provide enough protein)salt and pepper to taste
heat the oven to 450 F or 230 C
1. wash and then dry the cauliflower THOROUGHLY.
2. Grate/food process the cauliflower along with the garlic so they look like rice.
3. Put the cauliflower and garlic in the microwave for 5 minutes (with no water). You could steam them if you have no microwave.
4. Stir in the cheese, egg whites, herbs and chilli flakes. And spread onto baking parchment (sprayed with cooking spray). Sprinkle some salt over the top of the crust and put in oven until it starts to go golden.
5. Remove the insides (seeds and moisture) of the tomatoes, and then chop the remaining outside "skin" and dry thoroughly with kitchen paper. Chop half an onion, and dry with kitchen paper. At this point you can add any vegetable as long as it doesnt add too much moisture.
6. Remove the crust from the oven, and spread the base evenly with 1 wedge of cheese (it will be a thin layer). put the tomatoes, onions and any other vegetables/meat onto the base and put back in the oven for a further 15 minutes (or until vegetables are cooked)
