5 oz. chicken breast, cubed1 med. onion, diced2 C. Low Sodium Chicken Broth3 cloves Garlic, minced1/2 tsp curry powder1/4 tsp cinnamon1/4 tsp pumpkin pie spicesalt/pepper to taste
1. Combine all ingredients into a saucepan and bring to a boil.
2. Reduce heat, cover, and simmer for 45 minutes.
TIP: The chicken can go straight from the freezer to the saucepan or crock pot on this one. If frozen, place the chicken breast in whole and when soup is finished, cube or shred. Very flavorful!
