Cottage Cheese Corn Cakes

1 c corn flour or fine corn meal1/2 c whole wheat flour2 Tablespoons sugar1 teaspoon salt1/2 teaspoon baking powder1/4 teaspoon baking soda2 c nonfat cottage cheese2 eggs1-2 T waternon-stick cooking spray
Mix all dry ingredients together. In a separate bowl, mix wet ingredients together. Make a well in the dry ingredients and pour in wet ingredients. Mix together until just incorporated. Batter is pretty thick, so add some water to make it looser or press down in pan with a wet spatula to spread.
Pour batter in 1/4c portions into hot pan on medium high and cook until edges look a little dry 3-4 min. Flip and cook the other side ~2 minutes.
