Medifast Chicken with Red Pepper Sauce

12 oz chicken breast (used meat from rotisserie chicken)1 tbs olive oil 1.5 cups chopped red pepper1 small onion - optional (typically not used for Medifast but it is less than 1/4 cup spread across two meals) 1/2 cup chicken broth1/4 tsp pepper2 garlic cloves minced2 tbs basil
Heat 1 tbs oil over medium heat.
Add chopped peppers and onions and saute until firm.
Transfer to food processor - add chicken broth, pepper, garlic and basil to peppers and onions and blend until smooth. Sear chicken slightly in skilet while blending pepper mixture. Pour pepper mixture over chicken and cook a few minutes.
Serving Size: makes 2 servings
