Cuban Style Chicken

1/2 cup diced fresh pineapple2 tbsp rice vinegar1 tbsp orange marmelade1 (15 oz) can black beans, rinsed and drained1/4 teaspoon ground red pepper1/2 teaspoon salt1/2 teaspoon paprika4 (6 oz) skinless boneless chicken breastcooking spray 1/4 cup chopped cilantro
Combine pineapple, rice vinegar, orange marmelade, and black beans in medium sauce pan; add 1/8 teaspoon pepper. Bring to a simmer over medium heat; cook 1 minute or until thoroughly heated. Kepp warm. Heat a large nonstick skillet over medium heat and combine the remaining pepper, salt, and paprika & sprinkle over chicken. Coat chicken with cooking spray. Add chicken to pan; cook 5 minutes on each side or until done. Serve w/ bean mixture; sprinkle with cilantro for garnish.
