2 bags Trader Joe's frozen seafood blend 1 bag Trader Joe's frozen shelled edamame1 1/2 c chopped celery1/4 c chopped onion1/4 c chopped red pepper1/4 cup chopped flat leaf parsley1/4 cup olive oil1/2 cup lemon juicezest of 1 lemonfinely chopped garlic (optional)
Bring 2 bags frozen seafood blend to a gentle boil in water with some lemon juice and a couple slices of ginger root (optional) and then simmer till seafood is done. (Don't overcook!)
Drain seafood well and immediately add 1 bag of frozen edamame. (This cools seafood and defrosts edamame.)
Add:
1.5 c chopped celery
1/4 c chopped onion
1/4 c chopped red pepper
1/4 cup chopped flat leaf parsley
Toss with:
1/4 cup olive oil
1/2 cup lemon juice
zest of 1 lemon
finely chopped garlic (optional)
Chill
Makes approximately 10 - 2/3 cup servings
