apple cinnamon peanut butter muffins

Ingredients
1.5c buttermilk (i use skim milk with vinegar)1c oats.5c bran3 tbsp ground flax5 tbsp quinoa (cooked).5c white flour.5c whole wheat flour1tbsp cinnamon1.5 tsp baking powder3/4 tsp soda and salt1 scoop protein powder4 packets of stevia (to your taste).5 cup applesauce1/4 cup peanut butter3 egg whites2 apples (shredded)1/4 c peanuts
Directions
Preheat oven to 375 degrees.
Combine first 5 ingredients and let sit for 10 minutes.
Combine next 7 ingredients and make a well in the center.
Stir in applesauce, peanutbutter (melted) and egg whites.
Fold in pecans and apples.
Scoop into 12 muffin tins and bake for 18 minutes
