Rice Paper salad roll with chicken

Ingredients
8 leaves Boston Lettuce1 medium carrot1 green onion1/2 red pepper1/4 english cucumberfresh mint1/2 left-over cooked chicken breast6 med sheets of rice paper
Directions
Cut left over chicken, carrot, green onion, cucumber and green onion into thin strips. Rip up several mint leaves. Soak rice paper for 10 seconds and then load starting with lettuce and some of each ingredient.
Wrap tightly.
