Stir Fried Tofu

Ingredients
Tofu, firm, 1 block sliced and patted dry Trader Joes Light Coconut Milk, 1 can Olive Oil, 2 tbsp Soy Sauce, 1 tbsp Ginger Root, 1 tsp gratedOnions, raw, 1 medium slicedCarrots, raw, .5 cup slices Green or Red Peppers 1 cup strips Garlic, minced, 1 tsp Celery, raw, .5 cup sliced
Directions
Sear tofu in 1 T oil. Remove from pan. Stir fry veggies in 1 T oil. Add soy sauce and Coconut milk. Serve over tofu.

Serving Size: 2 oz tofu with 1/6th of the veggies on top
