potato soup

Ingredients
3 cups water6 cups diced potato1 large onion, diced3 large carrots, grated3 tablespoons beef stock3 cups milk2 tablespoons chopped parsley1 cup sour creamsalt and pepper to taste
Directions
Combine water, carrots, onion, potatoes, and beef stock in large saucepan. Simmer about fifteen minutes, until potatoes are tender. Mash the mixture. Stir in remaining ingredients and heat gently. Can add butter or cheese if desired.
