1 Tbs Garlic2 Cups Spinach1 Cup Canned Blackeye Peas1 Cup Cooked Brown Rice1 tbs Olive OilCrushed Red Pepper Flakes to tastePaprika for Garnish
Cook rice according to the instructions on package.
In a large skillet, saute garlic. Add the spinach to the skillet. Stir for a minute or two until it wilts. Add the black-eyed peas, black pepper, and crushed pepper if desired. Bring to a simmer on medium heat. Serve immediately over brown rice.
