Flourless Banana Pancakes

Ingredients
1 Large Fresh Banana 1 Large Egg1/4 cup frozen blueberries, thawed
Directions
Heat large skillet to Medium heat. Mash banana in medium bowl. Add egg, mix until well combined and looks like pancake batter. Spoon 1/2 into skillet, drop 1/2 of the blueberries onto the top. Cook for 7 mins, or until golden. Flip & cook until second size is golden. Repeat with the rest of the batter. Serve hot with berries on the side.

Serving Size: Makes 2 6-inch pancakes
