Cranberry Pork Roast

Ingredients
1 3 lb. pork loin roast1/2 c. apple juice1 can cranberry sauce (either kind)2 medium apples, coarsely chopped2 cups baby carrots1/8 tsp garlicsalt and pepper to taste
Directions
place apple juice, cranberry sauce, garlic powder, and chopped apples in crock pot. Mix well. Salt and pepper roast. Add to crock pot. Turn once. Pick up some of the sauce and put on top of roast. Add baby carrots and stir the edges so they get "saucy".

Cook on low in crock pot for no more than 6 hours

Serving Size: 12 3 oz servings of meat with sauce and carrots (meat loses some weight in the cooking process)
