Fast Chicken Fajitas (4 servings)

Ingredients
1 1/2 pounds boneless,skinless chicken cutlets (or breasts cut into about 8 strips.)2 table spoons olive oil1 teaspoon chili powder3 bell peppers (ribs and seeds removed) thinly sliced.4 garlic cloves, thinly sliced8 whole wheat tortillasFresh cilantro leaves, for servingfat free sour cream (optional)coarse salt and ground pepper
Directions
1. heat broiler, with track set 4 inches from heat. Arrange chicken on a rimmed baking sheet lined with aluminum foil, or some type of non stick paper, rub chicken with olive oil. Sprinkle with chili powder, and season with salt and pepper. Broil, with-out turning, until chicken is cooked through, about 7 - 10 minutes. Remove from Oven; set aside.

2. On another rimmed baking sheet lined with foil (or some type on non stick paper) toss peppers, onion, garlic with remaining olive oil; season with salt and pepper. Broil, tossing occasionally, until veggies are crisp-tender and slightly charred, 6-8 minutes.

3. meanwhile, thinly slice chicken crosswise. Stack and wrap tortillas in a damp paper towel; microwave on high until warm, about 1 minute. transfer chicken and pepper mixture to a platter, and serve with tortillas, cilantro, and sour cream.
