3 tbsp. dry old fashioned rolled oats (or substitute rice flakes or quinoa flakes if you can't tollerate oats)1 tbsp brown sugar (or to taste, or sweetener of choice)dash of salt1 large egg3/4 cup milk (1%)dash of pumpkin pie spice (or spice/flavoring of choice)1 tbsp dried cranberries or other dried fruit or 1/4 cup fresh fruit3 tbsp 1% cottage cheese
Spray a large cup, soup bowl, or ramekin with butter flavoured spray. Add all the ingredients to cup and mix well. Microwave on high for 3 minutes, stopping to stir half way through the cooking time. Remove from microwave and stir again and let sit for a couple of minutes to cool. Enjoy
