Paleo sweet potato latkes

Ingredients
Directions
1 sweet potato, grated1 onion, grated(After grating, drain excess juice) place in a bowl.Add:2 eggs1 tsp. arrowroot (this is an alternative to flour and not a grain).Ground pepper
Mix all ingredients together and set aside to "thicken".
In a frying pan, add 4 tablespoons of coconut oil and place on medium heat.
Drop sweet potato mix into the pan and fry on both sides until golden brown.
Place on a paper towel to absorb the extra oil, and serve.
This can be served with a fried egg over the top, or banana compote made of bananas, fresh squeezed orange, and arrowroot, and can be sweetened with just a drop of orange juice.
Serving Size: Makes 8 2" pancakes
