Apple raisin bran muffins

1.5 cups wheat bran1 cup nonfat milk1 tbsp white vinegar1 egg3 tbsp molasses2/3 cup Splenda or store brand sucralose2 tbsp canola oil1 medium apple, shredded (with peel)1 cup whole wheat flour1 tsp baking soda1 tsp baking powderdash of salt3/4 cup non packed raisins
1. Mix bran with milk and vinegar. Allow to sit for 5 minutes.
2. Meanwhile, mix egg, Splenda, oil and molasses until well blended.
3. Mix in bran mixture and shredded apple.
4. Stir in flour, baking powder, baking soda and salt until just mixed. Fold in raisins.
5. Bake in paper lined muffin cups or non stick muffin pan sprayed with Pam for 15-17 minutes at 400 degrees. Cool.
Serving Size: Makes 12 muffins
