Ham and spinach pasta

2 ozs (2/3) c. mini penne or other small pasta2 c. spinach2 tsp olive oil1/2 c. chopped onion (or use frozen or seasoning blend)\1 tbsp flour1 tsp. mustard1/2 c. skim milk1/4 c. cheese blend (mexican or italian)2 tbsp. parmesan cheese1/2 c. ham, cubed1/2 tsp black pepper
preheat oven to 400 deg.
Cook pasta, place spinach in colander and drain pasta over spinach.
Heat oil, saute onion for 5 min then stir in flour, mustard 1/2 tsp black pepper and cook 1 min. - add milk and cook until slightly thickened. Stir in cheese mix and 1 tbsp. parmesan and cook until cheese melts. Stir in pasta, spinach and ham and divide into two ramekins. sprinkle with remaining parmesan.
