Shrimp Curry

Ingredients
454g/1lb shrimp2 tbsp coconut oil1-2 potatos skin on, cut into small chunks1 lg spanish onion4 garlic cloves chopped2 tsp chopped ginger1 cup spinach chopped1 tsp cumin seed (mortard)1/2 tsp onion seed1 tsp tumeric1 tsp garam masala1 tsp cumin powderSalt and pepper to taste
Directions
Saute oil with onions, garlic, ginger and spices until well mixed and onions soften. Add water 1 cup at a time slowly. Bring to a boil. Let mixture thicken. Bring down to a simmer and add shrimp, mix in spinach. Simmer up to an hour to let flavours work in.
