Cheese-Stuffed Turkey Meatloaf

Ingredients
1 lb ground turkey (93/7)1/2 lb sweet italian turkey sausage 1 Egg1/2 cup panko bread crumbs seasoned1 tsp dried parsley1/2 tsp dried ground oregano1/2 cup finely chopped onion1 10 oz package frozen spinach, thawed, pressed dry1/2 tsp Kosher SAlt1/4 tsp Course ground pepper4 oz shredded Mozzarella (part skim)3 Tbs Ketchup1 Tbs Vinegar (white wine or cider)
Directions
Preheat oven to 375. Make sure spinach is thawed (you can do this in the microwave) and pressed dry. Combine meats, egg, crumbs, herbs and spices, salt, spinach, and onion. Mix well with clean hands. Spray a regular loaf pan. Press half of the meat mixture evenly into bottom of the pan. Sprinkle cheese on evenly. Top with the other half of the meat mixture. Stir ketchup and vinegar together, top meatloaf with ketchup sauce. Bake for 1 hour. Slice in to 6 even pieces.
