Low Carb Chicken Divan

1lb chicken breast boneless, skinless1 10 oz package frozen broccoli1/2 cup half and half1 cup chicken broth1/2 cup reduced fat sour cream1 cup reduced fat shredded cheddar cheese1 tsp curry
Cook broccoli until almost crisp-tender.
Boil chicken breast until done and drain. When cool enough to handle, cut into 1-inch pieces.
While chicken is cooking, in a bowl, mix half and half, chicken broth and sour cream. Add broccoli and chicken and mix well.
Spread in casserole dish and sprinkle with cheese. Bake at 350 for 20 minutes or until cheese is melted.
Serving Size: Serves 4.
