1 lb lean ground turkey1 15-oz can organic black beans, drained and rinsed1 14.5-oz can diced tomatoes, drained10 corn tortillas8 tbsp fat free sour cream1 avocado1 bunch scallions, copped1 cup shredded 2% cheddar cheese1 packet low sodium taco seasoninggarlic powdersalt & pepper
brown turkey in a skillet. add taco seasoning, black beans and tomatoes. simmer for 2 minutes. add scallions.
heat oven to 400. spray tortillas with olive oil, season with garlic powder, salt and pepper. place on a cookie sheet and bake for 7-8 minutes, until golden brown. remove from oven, allow to cool and break into pieces.
garnish with 2 tbsp fat free sour cream, pureed avocado and 1/4 cup shredded cheese.
Serving Size: makes 4 servings
