BL Red Team Farro Salad

4 cups water10 ounces Farro (about 1 1/2 cups)1 tsp salt, plus more to taste2 medium tomatoes, seeded and chopped1 cup scallions, chopped1 cup red pepper, chopped1 cup Red Kidney beans, canned, rinsed, drained1/4 cup cilantro (can substitute parsley, mint, or basil)1 garlic clove, minced1 cucumber, peeled,chopped and seeded2 slices Baby Swiss Cheese, cut in strips (can substitute other cheeses)2 tbsp Balsalmic VinegarBlack pepper, freshly ground, to taste1/4 cup Extra Virgin Olive Oil (about 4 tbsp)
Combine the water and farro in a medium saucepan. Add 1 teaspoon of salt. Bring to a boil over high heat. Reduce the heat to medium-low, cover, and simmer until the farro is tender, about 30 minutes. Drain well, and then transfer to a large bowl to cool.
Add the tomatoes, scallions, cucumber, cilantro, beans, and red pepper to the farro, and toss to combine. Top with cheese.
In a medium bowl, whisk together the garlic, vinegar, 1/8 tsp salt, pepper, and olive oil. Add the vinaigrette to the salad and toss to coat.
Serving Size: Makes 8 1-cup servings
