Ingredients
Brown LentilsLettuce or spinachTomatoesCottage CheeseOnions
Directions
1. Boil half a cup of brown lentils for 5 minutes
2. Shred lettuce and mix with chopped tomatoes and chopped onions
3. Drain lentils and pour over salad
4. Top with cottage cheese

Optional extras - sweet chilli sauce for extra flavor or diced bacon for meat eaters.
