Quinoa Paella

Ingredients
*Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 1 cup *Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" Onions, raw, 2 largeZucchini, 2 cup, sliced*Extra Virgin Olive Oil, 2 tbsp Chia Seed (Nutiva) 1 Tbsp, 1 tbspSesame Seed Salad Dressing, 1 tbsp
Directions
Clean and boil the Quinoa for 15 minutes (till it doubles in size).
Cut the vegetables into small cubes.
Sauté the onions and the peppers with the olive oil, when ready add the zucchinis and add salt if you like.
When the zuchinnis are done add the Quinoa and mix it well (add the Sesame and Chia seeds while mixing).
