Chicken Fried Cauli-rice

(coconut oil and or sesame oil for frying, optional)1 egg1 teaspoon soy sauce(a little chicken broth for frying, optional)2 oz. chicken, cut in strips1 tablespoon chopped onion1 tablespoon chopped celeryMore soy sauce to taste1 cup of prepared (cooked) cauliflower rice (find recipe at:https://recipes.sparkpeople.com/recipe-detail.asp?recipe=2149036 )
Spray a non-stick pan with Pam or other non-stick spray. (Or use oil if your plan allows it.)
Mix together the egg and soy sauce with a fork. Pour into a hot pan and cook like a pancake. Then dump out on a plate an cut into short strips. Set aside
Spray the pan again (or use some broth or more oil) and add the chicken, celery, and onion. When the chicken is cooked, add the cooked cauliflower rice and cooked egg. Stir with spatula until heated through. Serve.
Serving Size: Entire recipe is 1 protein serving and 1 vegetable serving
