Breakfast Quinoa with Prunes

3/4 cup quinoa1.5 cups wateralmond extract8 prunes1/2 cup unsweetened vanilla almond milk4 packets raw turbinado sugar
Rinse quinoa and cook in water according to directions. Meanwhile, chop prunes and divide evenly into 2 containers. Add a small amount of almond extract to each container. When quinoa is cooked, divide evenly into the containers, and store in the fridge. When you're ready for breakfast, pour 1/8 C almond milk (approximately) into a container and microwave 1 minute. Stir in one packet of raw sugar and top with another 1/8 C almond milk (1/4 C total per serving). Top with another packet of sugar and enjoy! Can add cinnamon, too.
