Griddled honey chicken with spicy sweet potato and yogurt sauce.

Ingredients
1 smallish sweet potato2 cloves of garlic1tbsp cumin powder1 tsp mixed spice1 tbsp honey (manuka is best but it costs so much and normal honey works fine too)1 Skinless chicken breastThe juice from one large lime (or two little ones)2 tbsp fat free plain yogurtabout an eighth of a cucumberSalad of your choice
Directions
Scrub the sweet potato (peel if you prefer but it's such a lot of faff)

chop them into wedge size peices and put them in the microwave for 4-5 minutes. leave to cool a bit.

chop or mince the garlic and mix in a t spoon of honey and the spices.

rub this mixture all over the sweet potato making sure it is completely covered and spray with a low fat cooking spray. Put in the over for around 15 minutes or until they look slightly crispy and golden brown.

while they are cooking, cut the skin off the chicken and rub the remainder of the honey and some lime juice into the breast.

Heat up a griddle pan till it is really hot and gently drop the chicken into it. DONT BE TEMPTED TO KEEP MOVING THE CHICKEN AROUND OTHERWISE YOU WONT GET THE NICE CHARGRILLED BLACK LINES.
just leave it. it will take about 7 minutes on each side depending on how thick it is.

cut up the cucumber into small chunks and place in a bowl with the yogurt. add the finely chopped mine and a sprinkle of sugar and black pepper and mix well.

serve with salad of your choice and some lime wedges
