Quick Simple Lentils

1/2 cup green lentils1/2 cup french lentils1 onion-chopped2 garlic cloves- minced2 tsp mustard seeds1-2 tsp coriander seed-ground1-2 tsp cumin seed - ground1 1/2 cups water13 oz can of coconut milk1 tbsp olive oilsalt to taste
First, add the olive oil to a medium sized pan over medium heat. Add the coriander, cumin, and mustard seeds.
When the seeds start 'popping', add in the onion and garlic. Saute until the onions become translucent. Add salt as desired.
Next, add the lentils, water, and can of coconut milk. Bring to a boil, then reduce to a simmer and cover, stirring occasionally.
Cook for about 30-40 minutes until the lentils are tender.
Serving Size: Makes about 4-5 cups I think
